What's for Dinner: Week 69

For those of you are new  to my blog I write these weekly plans to help me spend less (I kinda of love grocery shopping, yea I know I'm weird), to save time and to try and help us eat in more often. Also I love knowing what other people eat so I thought it would be fun to share. For a while I'll be adding my plans for what greens. I'll be eating since one of my resolutions is to build a habit of introducing more green veggies into our diet. Maybe some day it'll be so normal for us that I won't have to mention them any more.

Last week's mushroom soup was so freakishly good that we're having it again this week. I'll try to take some better pictures while I make it and then get the recipe up later in the week. Just one more week till we leave, I've got loads to do but I'm so so excited.

Oh and if you know of any eateries in the Orlando area please let me know we'll be there for 3 days before the cruise.

365 Project: Days 7-23

Here's a shot of Daniel's grandma at her 87th birthday dinner. I think her cake is only missing a my little pony on top.

I love this first one. I love how it's imperfect, I love remembering how much fun the girls had when they found the batting and were throwing it everywhere and I just love the feel of it. When I showed L (the littlest one) the picture she was obsessed she kept on asking to see it and she kept saying: 
              "I want to go there"
              "I want to fly with Tia"
              "I want to go to the sky"
I love her so much!

Daniel in the studio. They have so much fun and it makes him so happy and it means we all get more of his great music. You can listen to old songs from this project here and some newer stuff (but not this project that he was recording) here.


Here are all of them. Check out the one of me and L sewing, she will be my slave one day, oh yes she will.

Fitness: Week 22

148.0 again. I was within my 1600 cal a day eating limit and I did an extra day of cardio than my "full" amount. It's annoying and frustrating. I may ask Cody (my trainer) if we can test my fat soon because I'm bummed. My workouts have felt more intense but unless you're on steroids it's really hard for women to gain that much muscle weight in that amount of time. The only thing I can think is that I may be missing something in my food log. If my food log is right the math says I should at least down a pound. Maybe something's weird with my hormones (but for 3 weeks?!).  And of course my knees and ankles started bugging me.

Boo. The weight number is annoying but I know that I've been eating better (at least for the last half of last week so maybe the first bit was a lot higher than I thought) and that I've been doing good with my exercising so I just need to keep it up right? I just want a weight result soon. I guess I'll try to log the second I eat instead of a couple times during the day. I've got to be off on the counting that's the only real explanation. I'll be like one of those people stuck to their iphones but it will be my calorie counter.

oh just had a thought maybe my stress level is making my body hold onto stuff...I have been kinda of maxed out trying to get everything done before the vacay. Okay I'm going to try really hard not to worry about the weight. (sorry I know this is kinda a long post for a silly little weigh in post)

Review: Singer Zigzag Chainstitch Sewing Machine

Those of you who have been around for a while know how much I sew for my shop and how my nieces like to pretend to sew. For goodness sakes little L watched me sew and slept for hours while slung from a carrier when she was a baby and then as a toddler she loves sitting on my lap pretending to sew (see the Slave Labor post for proof).


I found Singer's Zigzag Chainstitch Sewing Machine at Joann Fabric and picked it up for the girls for Christmas (I paid 13$ after using a coupon on it). It was a huge hit. L is way more into sewing in general than T but they both like it a lot.

In short I adore it as a toy but would not recommend it as a 'first sewing machine'. I wrote a full review for it over at the Modern Handmade Child Magazine blog go read it here.

Tutorial: Quick and Easy Pop Up Card

Daniel's Grandma is celebrating her 87th birthday today. Happy Birthday! We did a small little dinner and cake to celebrate yesterday with the family and I whipped up one of my go to pop up cards. They are so easy and quick to make that I thought I'd share the how to's with all of you in case you wanted something fun for Valentine's day or just the next time you need a card.


What You'll Need
  • inside paper (I like card stock)
  • outside paper (this will be what shows when it's closed)
  • paper for embellishments
  • photo 
  • scissors
  • double sided tape

What to do
  1. Cut your picture out. I've used pictures, drawings, and words the possibilities are endless.
  2. Fold your inside paper in half. Decide where you want your picture to go. Lay it out and snip two lines making sure they hit about the center of your picture. Make sure to use a part of the picture where you can stick the 'pop up part' to without the paper showing.
  3. Fold the cut part to the inside of the card. Now do you kinda see how it works?
  4. Tape the outside paper to the backside of the inside paper with the pop fold to the inside.
  5. Tape your picture on. 
  6. If you want to use any speech bubbles or other embellishments you may want to place them and fold the card to make sure it doesn't stick out or you'll have to do what I did and trim it down
  7. Add any other details you may want (I went for clouds).
  8. Decorate the outside. I'm usually leaving things to the last minute so it's often just something written for me but doing a whole fancy card would definitely be a plus.
  9. Write your message on the inside and you're ready to give.

I'm on vacay count down. The musicmaker and I are working our butts off nonstop it seems to try to get a little ahead to minimize the post vacation catch-up that is inevitable. So we're on a faster food kinda binged.

Tutorial: Sequined Heart Headband

I've been wanting to make this headband for a while. I had the idea of it in my head but hadn't gotten around to it. Luckily my friend Laurel wanted to have a headband making day so voila. I LOVE IT.

It's so easy all you need is
  • felt
  • head band (you can use a traditional one but I'm obsessed with the elastic ones because they are so comfy)
  • loose sequence
  • tacky glue (make sure it works with fabric, the clear one does not I recommend the kind in my photo)
  • patience
 What to do
  1. Cut out a heart template. Hold it up to your head in a mirror to make sure you like the size.
  2. Cut your felt out in your heart shape (of course you can do any other shape you want too, I may have to do a star next!)
  3. Stand in front of the mirror with the head band on and hold the felt up to your head/headband to see what position you want. mark it in some way so you know where you want to sew or glue so it sits right when it's on your head. A fabric marker or pin should work.
  4. Attach your felt to your head band. I sew mine on with a three step zig zag but if you have a heard headband you should be able to glue it on
  5. Start gluing the sequence by adding glue to a small section (like an inch) and individually placing sequence.
  6. Repeat, trying not to become too annoyed at how long it's taking or that your fingers keep sticking to each other and everything else because it'll be worth it.
  7. Let dry.
  8. Wear your headband with pride.

Fitness: Week 21

I admitted to Cody my trainer that I was discouraged with the last two weeks of good eating, solid exercising and the scale not moving. He tried to assure me that it was absolutely nothing to worry about since I had logged everything and I was on top of things. So I'm trying not to let it bug me but it's hard you know.

Last night at pub quiz the kitchen was having a hard night so they took a LONG time to get everyone's food out. Hubby and I usually split 1 order of chicken and fries but to compensate for the delay they piled on the fries and gave an extra piece of chicken and we were both starving by the time it arrived so... That being said with all that salt I'm feeling a little better about being THE SAME WEIGHT yet another week since I'm sure without that I would probably be down. But really I want to see it go down next week bad.

Chicken Artichoke Alfredo

Janelle requested the recipe after I posted the picture in one of my What's for Dinner posts last week. As always feel free to ask me to post a recipe if you see a picture of something I post. This one is so easy and the basic sauce is a friend winning Alfredo recipe. I crave it every couple of days. I bet it would work with half and half as well.

Sauce:
1/8 C butter
1/2 tsp garlic
1/2 C cream
1/2-3/4 C shredded Parmesan
salt and pepper to taste
Bring to boil reduce heat stir till cheese is melted
add fresh basil

1 chicken breast cooked (this was alot you can definitely use less)
chopped and half a can artichokes chopped
4 ounces cooked pasta
Cook pasta, drain and set aside. Heat chicken and artichokes (I do it in the pasta pot). Add sauce and pasta and toss (add more cream or reserved pasta water if you want it saucier)
(makes 2 large servings and can easily be multiplied)

Shop Update: Valentines and Vacation


Just wanted to pop in to share my two new Valentine's Day inspired bottoms that I've added to the shop. The brown ones were made to matched the heart dress and I've also been planning to making onesies to go with them but just haven't gotten to it yet.

What's for Dinner: Week 67

I'll be eating since one of my resolutions is to build a habit of introducing more green veggies into our diet. Maybe some day it'll be so normal for us that I won't have to mention them any more.

Oh man the Talapia from last week was SO delish. I forgot to buy a lemon so pretty much all I did was sprinkle the fish with salt, dredge it in flour mixed with salt and pepper pan fry it in 1-2 TBS butter (for two fillets). When the fish was done I added some lemon juice to the pan drippings and some more butt poured that over the fish oh yum it was so so good. You should definitely try it

Show and Tell: Rosette Cluster Headband

Just wanted to share another one of my hair accessories. I'm so obsessed. I get compliments every time I wear it out. I think the best part is that I can throw my hair in a claw clip and put this on and I totally look put together. I love this grey one but I kinda have a problem with always being drawn to grey things. I've got this one listed in the shop but you can use the same technique I shared in the tutorial and just glue them together if you want to make one yourself.
I've been dying to make some more. Hopefully I'll get to it this weekend because I want some to go with every outfit when I go on the cruise ;)

Fitness Journal: Week 20

Thanks for all the tips and encouragement last week. So I was feeling REALLY good about this week. I got veggies in at everyday, my exercise was solid, I logged everything so I knew I was well within my goal of 1600 a day. But the other day I was down to 146 but then today I got on the scale and it said  148.0 and then a few minutes later (mind you without eating anything) 148.6 uggg (I'm logging the 148.0). I'm deciding to try to ignore the scale this week at least moodwise because I know I did good and I may even check the batteries of the scale/ go on it with some weights that I know how much they weight (I'm not sure if I've ever changed the batteries but I'd guess that if they were dying the screen would fad not say I weigh more but I'm annoyed at it)

Recipe: Cheesey Jalapeno Rolls AKA best bread ever

If you think I'm exaggerating when I say this is the best bread ever this was my facebook status today on my personal account.

just received hugs, kisses and a full on song and dance from Daniel Fischer when he realized I was making jalapeno cheese bread...I hope it comes out as good as last time

Luckily it was. I have never gotten this response from my husband before, keep in mind that I make all kinds of yummy stuff including all those cheesecakes. Not only him but my sister just instant messaged me to ask if she could have some bread if she came over. What makes it so good? The flavor and texture of the actual bread is the best I have ever made but the jalapeno and cheese add just another layer of specialness. Don't be afraid of the jalapeno, it really mostly gives flavor this isn't spicy unless for some reason your jalapenos are super spicy but you can always use less and if you want more kick definitely use more.
But it does take time. And planning. You need to start this the day before and have some time to wait the day of. But it freezes AMAZINGLY. You know the musicmaker is anti-leftover and even he was drooling each time I pulled one from the freezer. 

Ingredients

Night before:
1 ¼ cups bread flour
¾ cup water
¼ teaspoon instant yeast
Day of:
1 ¾ cups lukewarm water
¼ cup cornmeal
2 tbs butter
3 ½-4 cups bread flour
1 teaspoon instant yeast
2 teaspoons salt
3-4 jalapenos diced and  seeded (about 3/4 cup ) adjust this to your families preference though
1/2 to 3/4 C water
2 cups shredded sharp cheddar cheese (divided)
2 cups shredded pepper jack cheese (divided)

Directions


Night before:
Combine bread flour, water, 1/4 tsp instant yeast together; mix; add more water if necessary to make a moist dough. Do this in a food safe breathable container or cover with plastic wrap . Sit at room temperature overnight or for 12-18 hours. (I just do it the night before and start using it in the early afternoon)
(it could be wetter than this even)

Day of:
Combine the lukewarm water and cornmeal in saucepan. Bring to low boil then turn heat down and simmer 5 minutes. Stirring frequently so it doesn’t burn. Pour into mixing bowl stir in butter until well combinedand allow to cool to 110 degrees. Add in the 1 tsp instant yeast, and 1 cup bread flour. Mix on low with a bread hook until well blended.

Add in the salt, jalapenos, and 1/2 of each of the cheeses (1 C pepper jack and 1 C cheddar). Mix until blended. Add 1/2 to 3/4 C water. Add the flour slowly. The dough needs to be very sticky (the consistency of cinnamon rolls).
Add the "night before" mixture" a a small amount more flower if needed to get the right consistency. Mix 5-10 minutes. While mixing on low speed, the dough should stick to the bottom of the bowl but not the sides. It’s better to be on the wet side than the dry side.
Cover with plastic wrap and rest for 1-2 hours, till double in size. (room temp in the winter you'll probably need closer to 2 hours if you're impatient fill your sink with hot water put the mixing bowl in (you don't want the water to come close to getting in the bowl though) cover with plastic wrap and towel if needed to help weigh it down) and you can use it in 30-40 minutes)

Cover your table with flour. Dump dough onto flour and sprinkle more flour on top. Lightly press and roll the dough into a rectangle. Depending on the size of rolls you want cut dough in half with a pizza cutter. Put all but 1/2 a cup cheese on the dough.  Roll the dough, cut and sprinkle with cheese, cover loosely with plastic or towel. (I cut it into 20 pieces and they still ended up being pretty big) Place on cookie sheets, cut side up, spread the tops of the dough so the cheese is exposed and sprinkle reserved cheese (make sure to leave a decent amount of space between each roll they're going to rise again and grown when they bake. Rest for 1-2 hours.

Preheat oven to 425. Bake for 30-35 minutes. Cool. I highly recommend using heavy cookie sheets so the bottoms don't burn or get too crisp.

I know it's involved but I promise it's worth it.
